Ingredients
– 1 pound boneless, skinless chicken thighs, cut into 1-inch pieces
– 1 cup all-purpose flour
– 2 tablespoons cornstarch
– 2 tablespoons Thai red curry paste
– 2 tablespoons fish sauce
– 1 tablespoon brown sugar
– 2 tablespoons fresh lime juice
– 1/4 cup chopped fresh cilantro
– 4 brioche buns, split in half
– 1 cup thinly sliced cucumber
Instructions
1. In a large bowl, combine the chicken, flour, cornstarch, Thai red curry paste, fish sauce, brown sugar, and lime juice. Toss to coat the chicken evenly.
2. In a large skillet or Dutch oven, heat 2 inches of oil to 350°F. Working in batches, fry the chicken for 3-4 minutes, or until golden brown and cooked through.
3. Drain the fried chicken on a paper towel-lined plate.
4. Assemble the sandwiches by placing the fried chicken on the bottom buns, topping with sliced cucumbers and fresh cilantro.
