Ingredients

– 1 lb boneless, skinless chicken breasts, cut into bite-sized pieces

– 8 oz ramen noodles

– 1 cup thinly sliced cabbage

– 1 cup sliced carrots

– 2 green onions, thinly sliced

– 1/4 cup creamy peanut butter

– 2 tbsp soy sauce

– 1 tbsp rice vinegar

– 1 tsp sesame oil

– 1 tsp grated ginger

– 2 cloves garlic, minced

– 1/4 cup chicken broth

– 1/4 cup chopped cilantro


Instructions

1. 1. Bring a large pot of water to a boil. Cook the ramen noodles according to package instructions, then drain and set aside.

2. 2. In a large skillet or wok, heat 1 tbsp of oil over medium-high heat. Add the chicken and cook until browned and cooked through, about 5-7 minutes.

3. 3. Add the cabbage, carrots, and green onions to the skillet and stir-fry for 2-3 minutes until slightly softened.

4. 4. In a small bowl, whisk together the peanut butter, soy sauce, rice vinegar, sesame oil, ginger, and garlic. Pour the sauce into the skillet and stir to coat the chicken and vegetables.

5. 5. Add the cooked ramen noodles and chicken broth to the skillet, tossing everything together until well combined and heated through, about 2-3 minutes.

6. 6. Serve the Thai Peanut Chicken Ramen hot, garnished with chopped cilantro.

Notes

This recipe can be easily customized by adding your favorite vegetables or protein. For a spicier version, add a few drops of sriracha or chili oil to the peanut sauce.
