Description

Ingredients

– 1 box vanilla cake mix

– 3 eggs

– 1/3 cup vegetable oil

– 1 cup canned pumpkin puree

– 1 teaspoon ground cinnamon

– 1/2 teaspoon ground ginger

– 1/4 teaspoon ground nutmeg

– 1 (8 ounce) package cream cheese, softened

– 2 cups powdered sugar

– 12 ounces white chocolate, melted

– Autumn-themed sprinkles or decorations


Instructions

1. 1. Preheat oven to 350°F and grease a 9×13 inch baking pan.

2. 2. In a large bowl, combine the cake mix, eggs, vegetable oil, pumpkin puree, cinnamon, ginger, and nutmeg. Mix until well combined.

3. 3. Pour the batter into the prepared baking pan and bake for 30-35 minutes, or until a toothpick inserted into the center comes out clean.

4. 4. Allow the cake to cool completely, then crumble it into a large bowl.

5. 5. Add the softened cream cheese and powdered sugar to the cake crumbs and mix until well combined.

6. 6. Roll the cake mixture into 1-inch balls and place them on a parchment-lined baking sheet.

7. 7. Melt the white chocolate in a double boiler or the microwave, stirring frequently until smooth.

8. 8. Dip the cake balls into the melted chocolate, allowing any excess to drip off. Place the coated balls back on the baking sheet.

10. 10. Refrigerate the cake pops for at least 2 hours before serving.

Notes

For a richer flavor, you can substitute cream cheese frosting for the powdered sugar. You can also experiment with different chocolate coatings, such as milk chocolate or dark chocolate.
