Description

Ingredients

– 2 lbs carrots, peeled and cut into 1-inch pieces

– 2 tbsp olive oil

– 2 tbsp honey

– 1 tsp salt

– 1/2 tsp black pepper

– 2 tbsp fresh parsley, chopped


Instructions

1. 1. Preheat oven to 400°F.

2. 2. In a large bowl, toss the carrots with olive oil, honey, salt, and pepper until evenly coated.

3. 3. Spread the carrots in a single layer on a large baking sheet.

4. 4. Roast for 20-25 minutes, stirring halfway, until carrots are tender and lightly caramelized.

5. 5. Remove from oven and sprinkle with fresh parsley.

6. 6. Serve warm.

Notes

For even crispier edges, broil the carrots for 2-3 minutes at the end. You can also use different herbs like thyme or rosemary.
