Description

Celebrate the flavors of the season with this quick and easy Thanksgiving Cranberry Jello Salad. This vibrant, festive dish features a smooth and glossy jello base studded with tart cranberries and a refreshing hint of mint. It’s the perfect side dish or dessert for your holiday table.


Ingredients

– 1 (12 oz) package fresh or frozen cranberries

– 1 cup white sugar

– 1 (3 oz) package strawberry or cherry Jello

– 1 cup boiling water

– 1 cup cold water

– 2 tablespoons chopped fresh mint (optional)


Instructions

1. In a medium saucepan, combine the cranberries and sugar. Cook over medium heat, stirring occasionally, until the cranberries begin to pop and the sugar has dissolved, about 10 minutes.

2. Remove the cranberry mixture from the heat and stir in the Jello powder until dissolved.

3. Add the boiling water and stir until the Jello is completely dissolved, about 2 minutes.

4. Stir in the cold water. Pour the mixture into a 9×13 inch baking dish or individual molds.

5. Refrigerate until set, about 4 hours or overnight.

6. Garnish with fresh chopped mint before serving, if desired.

Notes

For a creamier texture, you can add 1 cup of sour cream or plain yogurt to the Jello mixture before refrigerating. This salad can be made up to 3 days in advance and stored covered in the refrigerator.
