Ingredients
– 8 cups mixed greens (such as spinach, arugula, and kale)
– 1 cup roasted butternut squash cubes
– 1/2 cup dried cranberries
– 1/4 cup toasted pecans
– 2 tablespoons crumbled feta cheese
– 3 tablespoons olive oil
– 2 tablespoons balsamic vinegar
– 1 tablespoon honey
– 1 garlic clove, minced

Instructions
1. 1. Preheat oven to 400°F. Toss the butternut squash cubes with a drizzle of olive oil and season with salt and pepper. Roast for 20-25 minutes, until tender and lightly caramelized.
