– 3 lbs yams, peeled and diced into 1-inch cubes

Instructions
1. – Preheat oven to 400°F (200°C).
2. – In a large bowl, toss the diced yams with olive oil, brown sugar, cinnamon, salt, and pepper until evenly coated.

4. – Roast for 25-30 minutes, flipping halfway, until yams are tender and lightly caramelized.
