Ingredients
– 1 cup all-purpose flour
– 1/2 cup unsweetened cocoa powder
– 1 teaspoon baking soda
– 1/4 teaspoon salt
– 1 cup granulated sugar
– 1/2 cup vegetable oil
– 2 large eggs
– 1 teaspoon vanilla extract
– 1 1/2 cups shredded zucchini
– 1/2 cup semi-sweet chocolate chips
Instructions
1. – Preheat oven to 350°F and grease an 8×8-inch baking pan.
2. – In a medium bowl, whisk together the flour, cocoa powder, baking soda, and salt.
3. – In a separate large bowl, beat the sugar and oil until well combined. Beat in the eggs one at a time, then stir in the vanilla.
4. – Fold the dry ingredients into the wet ingredients until just combined. Fold in the shredded zucchini and chocolate chips.
5. – Spread the batter evenly into the prepared baking pan.
6. – Bake for 22-25 minutes, or until a toothpick inserted in the center comes out clean.
7. – Allow the brownies to cool completely before cutting into squares.
Notes
For fudgier brownies, you can reduce the baking time by 2-3 minutes. Store leftover brownies in an airtight container at room temperature for up to 4 days.
