Description

These toffee shortbread cookies are a classic holiday treat with a buttery, crumbly texture and rich toffee flavor. They’re quick and easy to make, making them the perfect last-minute addition to your holiday baking lineup.

Ingredients

– 1 cup (2 sticks) unsalted butter, softened

– 3/4 cup granulated sugar

– 2 cups all-purpose flour

– 1/2 teaspoon salt

– 1 cup toffee bits

Instructions

1. – Preheat oven to 350°F. Line a baking sheet with parchment paper.

2. – In a large bowl, beat the butter and sugar together until light and fluffy, about 2-3 minutes.

3. – Add the flour and salt and mix until just combined. Fold in the toffee bits.

4. – Scoop rounded tablespoons of dough onto the prepared baking sheet, spacing them about 2 inches apart.

5. – Bake for 12-15 minutes, until the edges are lightly golden. Allow to cool on the baking sheet for 5 minutes before transferring to a wire rack to cool completely.

Notes

Store the cookies in an airtight container at room temperature for up to 1 week. For a festive touch, try dipping the cooled cookies in melted chocolate or drizzling with a simple glaze.
