Ingredients
– 1 1/2 cups graham cracker crumbs
– 6 tablespoons unsalted butter, melted
– 1 (14 oz) can sweetened condensed milk
– 1 1/2 cups shredded coconut
– 2 tablespoons lime zest
– 1/4 cup fresh lime juice
Instructions
1. Preheat your oven to 350°F (175°C). Line an 8×8-inch baking pan with parchment paper, leaving some overhang for easy removal.
2. In a medium bowl, mix together the graham cracker crumbs and melted butter until well combined. Press the mixture evenly into the prepared baking pan.
3. In another bowl, whisk together the sweetened condensed milk, shredded coconut, lime zest, and lime juice until well combined.
4. Spread the coconut-lime mixture evenly over the graham cracker crust.
5. Bake for 20-25 minutes, or until the edges are lightly golden.
6. Remove from the oven and let cool completely, then refrigerate for at least 2 hours before cutting into bars.
Notes
For an extra burst of flavor, garnish the chilled bars with additional lime zest or a sprinkle of toasted coconut. Store the bars in the refrigerator for up to 1 week.
