Ingredients
– 1 cup pineapple juice
– 1/2 cup soy sauce
– 1/4 cup brown sugar
– 3 cloves garlic, minced
– 1 tablespoon grated ginger
– Zest and juice of 1 lime
– 1 teaspoon dried thyme
– 1/2 teaspoon crushed red pepper flakes (optional)
Instructions
1. In a medium bowl, whisk together the pineapple juice, soy sauce, brown sugar, garlic, ginger, lime zest and juice, thyme, and red pepper flakes (if using).
2. Add your protein of choice (chicken, shrimp, tofu, etc.) or vegetables to the marinade, making sure they are fully submerged. Cover and refrigerate for at least 30 minutes, up to 4 hours.
3. Remove the marinated items from the refrigerator and cook as desired, whether grilling, baking, or sautéing. Discard any remaining marinade.
4. Serve the Tropical Island Marinade-coated protein or vegetables immediately, garnished with fresh pineapple, cilantro, and lime wedges.
Notes
– For extra flavor, you can add a tablespoon of sesame oil to the marinade.
– This marinade works great with chicken, shrimp, pork, or firm white fish like mahi-mahi or halibut.
– Marinate for at least 30 minutes, but no more than 4 hours, to avoid the protein becoming mushy.
