Ingredients
– 1 (5 oz) can tuna, drained
– 1 avocado, mashed
– 2 eggs, scrambled
– 1 whole wheat tortilla
– 1 tbsp olive oil
– Salt and pepper to taste
Instructions
1. – In a small bowl, mix together the drained tuna and mashed avocado until well combined.
2. – In a nonstick skillet, scramble the eggs with a drizzle of olive oil over medium heat until cooked through.
3. – Lay the tortilla on a flat surface and spread the tuna-avocado mixture down the center.
4. – Top with the scrambled eggs.
5. – Fold the bottom of the tortilla up over the filling, then fold in the sides and continue rolling tightly.
6. – Serve immediately or wrap in parchment paper for a portable meal.
