Description

Tuna salad nestled in crisp cucumber boats for a refreshing and low-carb appetizer or snack.


Ingredients

– 2 (5 oz) cans tuna, drained

– 1/4 cup mayonnaise

– 1 tablespoon fresh dill, chopped

– 1 tablespoon lemon juice

– 1/4 teaspoon salt

– 1/8 teaspoon black pepper

– 2 medium cucumbers, sliced into 1-inch thick rounds


Instructions

1. In a medium bowl, mix together the drained tuna, mayonnaise, chopped dill, lemon juice, salt, and pepper until well combined.

2. Slice the cucumbers into 1-inch thick rounds.

3. Spoon the tuna salad mixture onto the cucumber rounds, dividing it evenly.

4. Garnish the tuna salad cucumber boats with additional fresh dill and lemon wedges, if desired.

Notes

For best results, chill the tuna salad for 30 minutes before assembling the cucumber boats. You can also try adding finely diced celery or red onion to the tuna salad for extra crunch and flavor.
