Ingredients

– 2 pounds turkey breast, cubed

– 6 cups day-old bread cubes

– 1 onion, diced

– 2 celery stalks, diced

– 2 cups chicken broth

– 2 eggs, beaten

– 1 teaspoon poultry seasoning

– 1/2 teaspoon salt

– 1/4 teaspoon black pepper

– 2 tablespoons butter, melted


Instructions

1. 1. Preheat oven to 375°F.

2. 2. In a large bowl, combine the turkey, bread cubes, onion, and celery.

3. 3. In a separate bowl, whisk together the chicken broth, eggs, poultry seasoning, salt, and pepper.

4. 4. Pour the broth mixture over the turkey and bread mixture, and stir gently to combine.

5. 5. Transfer the mixture to a greased 9×13 baking dish. Drizzle the melted butter over the top.

6. 6. Bake for 30-35 minutes, or until the turkey is cooked through and the top is golden brown.

7. 7. Let the casserole rest for 5 minutes before serving.

Notes

For a heartier dish, you can add cooked sausage or mushrooms to the casserole. Leftover turkey can also be used in place of the turkey breast.
