Ingredients
– 1 lb ground turkey
– 1 onion, diced
– 1 bell pepper, diced
– 2 cloves garlic, minced
– 1 packet taco seasoning
– 1 (15 oz) can black beans, drained and rinsed
– 1 (15 oz) can corn, drained
– 1 (28 oz) can diced tomatoes
– 4 cups chicken broth
– Salt and pepper to taste
– Toppings: Shredded cheese, avocado, cilantro, sour cream
Instructions
1. – In a large pot or Dutch oven, cook the ground turkey over medium-high heat until browned and crumbled, 5-7 minutes.
2. – Add the diced onion, bell pepper, and garlic. Sauté until the vegetables are tender, about 5 minutes.
3. – Stir in the taco seasoning and cook for 1 minute to toast the spices.
4. – Add the black beans, corn, diced tomatoes, and chicken broth. Bring the soup to a simmer and let it cook for 15-20 minutes, until heated through.
5. – Season with salt and pepper to taste.
6. – Serve the Turkey Taco Soup warm, topped with shredded cheese, avocado, cilantro, and a dollop of sour cream.
Notes
