Description

Ingredients

– 1 cup finely grated carrots

– 8 ounces cream cheese, softened

– 1/2 cup powdered sugar

– 1 teaspoon ground cinnamon

– 1/2 teaspoon ground cardamom

– 1/4 teaspoon ground cloves

– 1/4 cup chopped pistachios, for coating


Instructions

1. In a medium bowl, combine the grated carrots, cream cheese, powdered sugar, cinnamon, cardamom, and cloves. Mix until well incorporated and the mixture is smooth.

2. Using a small cookie scoop or spoon, form the mixture into 1-inch balls and place them on a parchment-lined baking sheet.

3. Refrigerate the truffles for at least 30 minutes to firm up.

4. Place the chopped pistachios in a shallow bowl. Roll the chilled truffles in the pistachios, gently pressing to coat them evenly.
