Description

Indulge in the rich, creamy flavors of Turkish Eggs (Cilbir) – a unique and flavorful breakfast or brunch dish that’s ready in just 30 minutes.


Ingredients

– 4 large eggs

– 1 cup plain Greek yogurt

– 2 cloves garlic, minced

– 1 teaspoon ground cumin

– 1 teaspoon smoked paprika

– 1/4 cup extra-virgin olive oil

– 2 tablespoons chopped fresh parsley

– 2 tablespoons chopped fresh dill

– Salt and pepper to taste

– Crusty bread, for serving


Instructions

1. In a medium saucepan, bring 4 cups of water to a gentle simmer.

2. Gently crack the eggs into the simmering water and poach for 4-5 minutes, until the whites are set but the yolks are still runny.

3. In a small bowl, whisk together the Greek yogurt, garlic, cumin, and smoked paprika. Season with salt and pepper.

4. Spread the seasoned yogurt onto a serving plate or shallow bowl.

5. Using a slotted spoon, transfer the poached eggs from the water and arrange them on top of the yogurt.

6. Drizzle the eggs with the olive oil and garnish with the chopped parsley and dill.

7. Serve immediately with crusty bread.

Notes

For a heartier meal, you can serve the Turkish Eggs (Cilbir) on top of toasted bread or pita. You can also experiment with different garnishes, such as roasted red peppers, crumbled feta, or a sprinkle of za’atar spice mix.
