Description

Indulge in the captivating flavors of Turkish Poached Apricots with Ricotta – a light, refreshing dessert that’s easy to prepare and bursting with natural sweetness.


Ingredients

– 1 pound fresh apricots, halved and pitted

– 1 cup water

– 1/2 cup granulated sugar

– 2 tablespoons fresh lemon juice

– 1 cup whole-milk ricotta cheese

– 1 tablespoon powdered sugar, for dusting

– Fresh mint leaves, for garnish


Instructions

1. In a medium saucepan, combine the water and granulated sugar. Bring to a simmer, stirring occasionally, until the sugar has dissolved.

2. Add the apricot halves to the simmering sugar water. Poach the apricots for 8-10 minutes, or until they are tender but still hold their shape.

3. Remove the poached apricots from the liquid using a slotted spoon and transfer them to a bowl. Drizzle the poaching liquid over the apricots and stir in the lemon juice. Allow to cool to room temperature.

4. To serve, place a few poached apricot halves in a bowl or on a plate. Top with a dollop of ricotta cheese and a light dusting of powdered sugar. Garnish with fresh mint leaves.

Notes

For a variation, try serving the Turkish Poached Apricots with Ricotta over a bed of mixed greens for a refreshing salad. The leftover poaching liquid can also be used to sweeten iced tea or lemonade.
