Ingredients
– 1 (15 ounce) can sweetened condensed milk
– 1 cup mashed ube (purple yam)
– 1 cup semi-sweet chocolate chips
Instructions
1. 1. Preheat your oven to 350°F (175°C). Line a baking sheet with parchment paper.
2. 2. In a medium bowl, combine the sweetened condensed milk and mashed ube. Mix well until fully incorporated.
3. 3. Fold in the chocolate chips, making sure they are evenly distributed throughout the batter.
4. 4. Scoop the batter by the tablespoonful onto the prepared baking sheet, spacing the cookies about 2 inches apart.
5. 5. Bake for 12-15 minutes, or until the edges are lightly golden and the centers are still slightly soft.
6. 6. Allow the cookies to cool on the baking sheet for 5 minutes before transferring them to a wire rack to cool completely.
Notes
For a chunkier texture, you can leave some larger pieces of ube in the batter. These cookies can be stored in an airtight container at room temperature for up to 5 days.
