Description

Ingredients

– 1 cup ube (purple sweet potato), grated or mashed

– 1 cup mochi flour

– 2 eggs

– 1 cup milk

– 1/4 cup sugar

– 1/4 cup unsalted butter, melted

– 1 teaspoon vanilla extract

– 1/2 teaspoon baking powder

– 1/4 teaspoon salt


Instructions

1. In a large bowl, whisk together the ube, mochi flour, eggs, milk, sugar, melted butter, and vanilla extract until well combined.

2. Stir in the baking powder and salt, mixing until just incorporated.

3. Preheat a waffle iron and spray with non-stick cooking spray.

4. Scoop the batter onto the hot waffle iron, using about 1/2 cup of batter per waffle. Cook for 3-4 minutes, or until the waffles are golden brown and crispy.

5. Serve the Ube Mochi Waffles warm, with your desired toppings such as maple syrup, fresh berries, or a dusting of powdered sugar.

Notes

For a richer flavor, you can use coconut milk instead of regular milk. You can also add a tablespoon of ube extract to the batter for an even more pronounced ube taste.
