Ingredients
– 2 1/4 cups all-purpose flour
– 1 teaspoon baking powder
– 1/2 teaspoon salt
– 1 cup unsalted butter, softened
– 1 1/4 cups granulated sugar
– 1 egg
– 2 teaspoons vanilla extract
Instructions
1. 1. Preheat the oven to 375°F (190°C). Line a baking sheet with parchment paper.
2. 2. In a medium bowl, whisk together the flour, baking powder, and salt. Set aside.
3. 3. In a large bowl, beat the butter and sugar together until light and fluffy, about 2-3 minutes. Beat in the egg and vanilla extract until combined.
4. 4. Gradually add the dry ingredients to the wet ingredients and mix until just combined, being careful not to overmix.
5. 5. Scoop the dough by the tablespoonful and roll into balls. Place the balls about 2 inches apart on the prepared baking sheet.
6. 6. Bake for 10-12 minutes, or until the edges are lightly golden. Allow the cookies to cool on the baking sheet for 5 minutes before transferring to a wire rack to cool completely.
Notes
