This quick and easy Vegan One-Pot Lentil Soup is the perfect healthy, protein-packed meal. Made with just a few simple ingredients, it’s ready in just 15 minutes for a delicious and satisfying dish.
Ingredients
– 1 tablespoon olive oil
– 1 onion, diced
– 3 carrots, peeled and diced
– 3 cloves garlic, minced
– 1 cup brown lentils, rinsed
– 4 cups vegetable broth
– 1 teaspoon dried thyme
– 1/2 teaspoon ground cumin
– Salt and pepper to taste
– Chopped fresh parsley for garnish
Instructions
1. – In a large pot, heat the olive oil over medium heat. Add the onion and carrots and sauté for 5 minutes until softened.
2. – Add the garlic and sauté for 1 minute until fragrant.
3. – Stir in the lentils, vegetable broth, thyme, and cumin. Season with salt and pepper.
4. – Bring the soup to a boil, then reduce heat and simmer for 10-15 minutes, until the lentils are tender.
5. – Ladle the soup into bowls and garnish with fresh chopped parsley.
Notes
For a creamier texture, you can blend a portion of the soup before serving. This soup also freezes well for easy meal prep.
