Ingredients
– 8 slices sourdough bread
– 8 ounces cheddar cheese, sliced
– 1 cup kimchi, chopped
– 2 tablespoons unsalted butter, softened
Instructions
1. Preheat a large skillet or griddle over medium heat.
2. Spread the butter evenly on one side of each slice of bread.
3. Place 4 slices of bread, buttered side down, in the preheated skillet.
4. Top each slice with a few slices of cheddar cheese, followed by a generous amount of chopped kimchi.
5. Place the remaining 4 slices of bread, buttered side up, on top of the kimchi and cheese.
6. Cook the sandwiches for 3-4 minutes per side, or until the bread is golden brown and the cheese is melted.
