Ingredients

– 1 lb ground turkey

– 1 onion, diced

– 2 cloves garlic, minced

– 1 packet taco seasoning

– 1 can (15 oz) black beans, drained and rinsed

– 1 can (15 oz) kidney beans, drained and rinsed

– 1 can (15 oz) corn, drained

– 1 can (28 oz) diced tomatoes

– 4 cups low-sodium chicken broth

– Salt and pepper to taste

– Chopped fresh cilantro for garnish


Instructions

1. 1. In a large pot or Dutch oven, cook the ground turkey over medium-high heat until browned and crumbled, about 5-7 minutes.

2. 2. Add the diced onion and minced garlic to the pot and sauté until the onion is translucent, about 3-4 minutes.

3. 3. Stir in the taco seasoning and mix well to coat the turkey and vegetables.

4. 4. Add the black beans, kidney beans, corn, diced tomatoes, and chicken broth. Bring the mixture to a boil.

Notes
