Description

This classic White Bean Mushroom Stew is a comforting and flavorful dish that’s perfect for a cozy dinner. With tender mushrooms, creamy white beans, and a rich, savory broth, this easy-to-make stew is sure to become a new family favorite.


Ingredients

– 2 tablespoons olive oil

– 1 onion, diced

– 3 cloves garlic, minced

– 1 pound cremini mushrooms, sliced

– 2 cans (15 oz each) white beans, drained and rinsed

– 4 cups vegetable or chicken broth

– 2 sprigs fresh thyme

– 1 bay leaf

– Salt and black pepper to taste

– Chopped parsley for garnish


Instructions

1. In a large pot or Dutch oven, heat the olive oil over medium heat.

2. Add the diced onion and sauté for 5 minutes, until translucent.

3. Stir in the minced garlic and sauté for 1 minute, until fragrant.

4. Add the sliced mushrooms and cook for 8-10 minutes, until the mushrooms are tender and lightly browned.

5. Pour in the vegetable or chicken broth and add the drained and rinsed white beans, thyme sprigs, and bay leaf.

6. Bring the mixture to a boil, then reduce the heat and let the stew simmer for 20-25 minutes, until the flavors have melded and the broth has thickened slightly.

7. Season with salt and black pepper to taste.

8. Ladle the stew into bowls and garnish with chopped parsley.

Notes

This stew can be made in advance and reheated, or frozen for up to 3 months. For a heartier meal, serve with crusty bread or over a bed of cooked grains.
