Description

Ingredients

– 1 lb boneless, skinless chicken breasts, cubed

– 2 Granny Smith apples, peeled and diced

– 1 onion, diced

– 3 cloves garlic, minced

– 2 tbsp olive oil

– 2 tbsp chili powder

– 1 tsp ground cumin

– 1 tsp dried oregano

– 1/2 tsp smoked paprika

– 1/4 tsp cayenne pepper (optional)

– 1 (15 oz) can diced tomatoes

– 1 (15 oz) can white kidney beans, drained and rinsed

– 2 cups low-sodium chicken broth

– 1 cup shredded white cheddar cheese

– Salt and pepper to taste


Instructions

1. – In a large pot or Dutch oven, heat the olive oil over medium heat.

2. – Add the diced onion and sauté for 5 minutes until translucent.

3. – Stir in the minced garlic and cook for 1 minute until fragrant.

4. – Add the cubed chicken and cook for 5-7 minutes, or until the chicken is lightly browned.

5. – Stir in the diced apples, chili powder, cumin, oregano, smoked paprika, and cayenne (if using). Cook for 2-3 minutes.

6. – Pour in the diced tomatoes, white kidney beans, and chicken broth. Bring the mixture to a boil, then reduce the heat and let simmer for 20-25 minutes, or until the chicken is cooked through and the chili has thickened.

7. – Remove from heat and stir in the shredded white cheddar cheese until melted.

8. – Season with salt and pepper to taste.

9. – Serve hot, garnished with additional cheese, green onions, or sour cream, if desired.

Notes

– For a creamier texture, you can blend a portion of the chili in a blender or with an immersion blender.

– Swap the Granny Smith apples for a sweeter variety, like Honeycrisp or Fuji, if desired.
