Ingredients
– 1 lb boneless, skinless chicken breasts, cubed
– 1 onion, diced
– 3 cloves garlic, minced
– 2 cans (15 oz each) white beans, drained and rinsed
– 2 cups chicken broth
– 1 tsp ground cumin
– 1 tsp dried oregano
– 1 tsp chili powder
– 1/2 tsp ground coriander
– 1/4 tsp cayenne pepper
– Salt and black pepper to taste
– Chopped fresh cilantro for garnish
Instructions
1. – In a large pot or Dutch oven, sauté the chicken over medium-high heat until lightly browned, about 5 minutes.
2. – Add the onion and garlic and cook for 2-3 minutes until fragrant.
3. – Stir in the white beans, chicken broth, cumin, oregano, chili powder, coriander, and cayenne. Season with salt and pepper to taste.
4. – Bring the mixture to a simmer and cook for 15-20 minutes, stirring occasionally, until the chicken is cooked through and the flavors have melded.
