Description

Ingredients

– 2 cups cooked wild rice

– 1 pound roasted sweet potatoes, cut into bite-sized pieces

– 1 cup roasted Brussels sprouts, halved

– 1/2 red onion, thinly sliced

– 1/4 cup creamy dressing (such as a lemon-tahini or honey-mustard dressing)

– 2 tablespoons chopped fresh parsley

– 1 tablespoon toasted pumpkin seeds

– Salt and freshly ground black pepper, to taste


Instructions

1. Cook the wild rice according to package instructions. Fluff with a fork and set aside to cool slightly.

2. In a large bowl, combine the cooked wild rice, roasted sweet potatoes, roasted Brussels sprouts, and sliced red onion.
