Ingredients
– 2 large English cucumbers, sliced into 1/2-inch thick rounds
– 3 tablespoons rice vinegar
– 2 tablespoons toasted sesame oil
– 1 tablespoon soy sauce
– 1 tablespoon white sugar
– 2 cloves garlic, minced
– 1 teaspoon grated fresh ginger
– 1/4 cup thinly sliced green onions
– 2 tablespoons toasted sesame seeds
– 2 tablespoons chopped fresh cilantro
Instructions
1. Place the cucumber slices in a large bowl and use a fork or the back of a spoon to lightly smash them, breaking them up into smaller, bite-sized pieces.
2. In a small bowl, whisk together the rice vinegar, sesame oil, soy sauce, and sugar until the sugar has dissolved.
3. Pour the dressing over the smashed cucumbers and toss to coat evenly.
4. Stir in the minced garlic, grated ginger, green onions, sesame seeds, and chopped cilantro. Toss to combine.
5. Serve the Asian Smashed Cucumber Salad immediately, or refrigerate for up to 2 hours before serving.
Notes
For a spicier version, add a teaspoon of chili oil or crushed red pepper flakes to the dressing. This salad is best consumed within a day of making it to maintain the crispness of the cucumbers.
