Description

Avocado-Rich Cowboy Caviar is a fresh and zesty dip that combines creamy avocados with colorful vegetables and hearty beans. It’s perfect for snacking or as a party appetizer.


Ingredients

1 ripe avocado

1 cup black beans, rinsed and drained

1 cup corn (fresh or canned)

1 medium red bell pepper, diced

1 medium jalapeño, finely chopped

1 small red onion, finely chopped

1/4 cup fresh cilantro, chopped

1 lime, juiced

Salt and pepper to taste


Instructions

1. In a large bowl, mash the avocado with a fork until creamy but still chunky.

2. Add black beans, corn, diced red bell pepper, jalapeño, red onion, and cilantro to the bowl.

3. Squeeze the lime juice over the mixture and season with salt and pepper.

4. Gently fold everything together until combined.

5. Serve immediately with tortilla chips or fresh veggies for dipping.

Notes
