Description

Ingredients

– 24 fresh oysters, shucked

– 2 cups fresh spinach, finely chopped

– 1/2 cup Parmesan cheese, grated

– 1/4 cup panko breadcrumbs

– 2 tablespoons unsalted butter, melted

– 2 cloves garlic, minced

– 2 tablespoons lemon juice

– 1/4 teaspoon cayenne pepper

– Salt and pepper to taste


Instructions

1. Preheat your oven to 400°F (200°C).

2. In a medium bowl, combine the chopped spinach, Parmesan cheese, panko breadcrumbs, melted butter, garlic, lemon juice, cayenne pepper, salt, and pepper. Mix well to create the Rockefeller topping.

3. Arrange the shucked oysters in a baking dish or on a baking sheet. Spoon the Rockefeller topping evenly over the top of the oysters.

4. Bake the oysters for 12-15 minutes, or until the topping is golden brown and the oysters are heated through.

5. Serve the Baked Oysters Rockefeller immediately, garnished with lemon wedges if desired. Enjoy!
