Indulge in the bold, savory flavors of Beef Birria Tacos with Consome – a mouthwatering fusion of tender beef, aromatic spices, and a rich, comforting broth.
Ingredients
– 2 pounds beef chuck roast, cut into 1-inch cubes
– 1 onion, diced
– 4 cloves garlic, minced
– 2 chipotle chiles in adobo sauce, finely chopped
– 2 tablespoons chili powder
– 1 tablespoon ground cumin
– 1 teaspoon dried oregano
– 1 teaspoon ground cinnamon
– 1 teaspoon salt
– 4 cups beef broth
– 12 corn tortillas
– Shredded Oaxaca or Monterey Jack cheese
– Chopped white onion
– Chopped cilantro
Instructions
1. In a large Dutch oven or heavy-bottomed pot, brown the beef over medium-high heat until it starts to develop a nice sear, about 5 minutes.
2. Add the onion and garlic and cook for 2-3 minutes until fragrant.
3. Stir in the chipotle chiles, chili powder, cumin, oregano, cinnamon, and salt. Cook for 1 minute to toast the spices.
4. Pour in the beef broth and bring the mixture to a boil. Reduce heat to low, cover, and simmer for 2-3 hours, until the beef is very tender.
5. Using two forks, shred the beef directly in the pot.
6. To serve, warm the tortillas and top each one with the shredded beef, shredded cheese, onion, and cilantro.
7. Serve the Beef Birria Tacos with the rich, flavorful Consome broth on the side for dipping.
Notes
For extra flavor, you can sear the beef in batches to get a nice brown crust. Adjust the spice level by adding more or less chipotle chiles. The Consome broth can be made a day in advance and reheated.
