Ingredients

– 1 pound large shrimp, peeled and deveined

– 2 tablespoons Cajun or Blackening seasoning

– 2 tablespoons unsalted butter

– 1 onion, diced

– 3 cloves garlic, minced

– 8 ounces mushrooms, sliced

– 2 cups beef broth

– 1 cup sour cream

– 2 tablespoons Dijon mustard

– 1 tablespoon Worcestershire sauce

– 1/2 teaspoon paprika

– Salt and black pepper to taste

– 8 ounces egg noodles, cooked according to package instructions

– Chopped parsley for garnish


Instructions

1. Season the shrimp with the Cajun or Blackening seasoning.

2. Melt the butter in a large skillet over medium-high heat. Add the shrimp and cook for 2-3 minutes per side, or until they are lightly charred and cooked through. Remove the shrimp from the skillet and set aside.

3. In the same skillet, sauté the onion for 3-4 minutes until translucent. Add the garlic and mushrooms, and cook for an additional 2-3 minutes.

4. Pour in the beef broth and bring the mixture to a simmer. Stir in the sour cream, Dijon mustard, Worcestershire sauce, and paprika. Season with salt and black pepper to taste.

5. Reduce the heat to low and let the sauce simmer for 5-7 minutes, stirring occasionally, until thickened.

6. Add the cooked shrimp back to the skillet and toss to coat in the sauce.

7. Serve the Blackened Shrimp Stroganoff over the cooked egg noodles, garnished with chopped parsley.

Notes

For a spicier version, increase the amount of Cajun or Blackening seasoning. You can also use chicken broth instead of beef broth if desired.
