Ingredients
– 1 pound boneless, skinless chicken breasts
– 2 cups mixed greens
– 1 cup fresh blueberries
– 1/4 cup red onion, thinly sliced
– 2 tablespoons olive oil
– 1 tablespoon balsamic vinegar
– 1 teaspoon Dijon mustard
– 1 teaspoon honey
– Salt and pepper to taste
Instructions
1. Preheat grill or grill pan to medium-high heat.
2. Season the chicken breasts with salt and pepper.
3. Grill the chicken for 5-7 minutes per side, or until cooked through. Let rest for 5 minutes, then slice or shred the chicken.
4. In a large bowl, combine the mixed greens, blueberries, and red onion.
5. In a small bowl, whisk together the olive oil, balsamic vinegar, Dijon mustard, and honey. Season with salt and pepper.
6. Drizzle the vinaigrette over the salad and toss to coat.
7. Top the salad with the grilled chicken and serve immediately.
Notes
For added crunch, you can also add toasted almonds or chopped walnuts to the salad. If you prefer a sweeter dressing, you can increase the amount of honey. This salad is also delicious with goat cheese or feta crumbled on top.
