Ingredients
– 1 (14 oz) can coconut milk
– 1 (14 oz) can sweetened condensed milk
– 1 teaspoon vanilla extract
– 1/4 cup shredded coconut, plus more for garnish
Instructions
1. In a medium saucepan, combine the coconut milk and sweetened condensed milk. Whisk to combine.
2. Heat the mixture over medium, stirring frequently, until it thickens and comes to a gentle simmer, about 5 minutes.
3. Remove from heat and stir in the vanilla extract and 1/4 cup of shredded coconut.
4. Pour the coconut pudding into individual serving dishes or one larger serving bowl.
5. Refrigerate for at least 2 hours, or until set.

Notes
