Description

Buttery, boozy Butterbeer Cookies are a delightful comfort food treat inspired by the wizarding world. These easy-to-make cookies feature a rich, caramelized flavor profile and a soft, chewy texture that will transport you to Hogsmeade with every bite.

Ingredients

– 1 cup unsalted butter, softened

– 1 cup light brown sugar

– 1 egg

– 2 tsp vanilla extract

– 2 cups all-purpose flour

– 1 tsp baking powder

– 1/2 tsp salt

– 1/4 cup butterscotch or caramel sauce, for drizzling

Instructions

1. – Preheat oven to 350°F. Line a baking sheet with parchment paper.

2. – In a large bowl, cream together the softened butter and brown sugar until light and fluffy.

3. – Beat in the egg and vanilla extract until well combined.

4. – In a separate bowl, whisk together the flour, baking powder, and salt.

5. – Gradually mix the dry ingredients into the wet ingredients until a dough forms.

6. – Scoop heaping tablespoon-sized balls of dough onto the prepared baking sheet, spacing them about 2 inches apart.

7. – Bake for 10-12 minutes, or until the cookies are golden brown and set.

8. – Remove from the oven and let cool on the baking sheet for 5 minutes before transferring to a wire rack.

9. – Once cooled, drizzle the cookies with the butterscotch or caramel sauce.

Notes

– For a more pronounced butterbeer flavor, substitute 2 tablespoons of the vanilla extract with 2 tablespoons of butterscotch schnapps or rum extract.

– Store the cookies in an airtight container at room temperature for up to 5 days.
