Description

Caprese Chicken Foil Packs are a delicious and easy-to-make dinner that combines juicy chicken breasts, melted mozzarella cheese, fresh tomatoes, and fragrant basil. Baked in a foil packet, this meal is packed with flavor and perfect for a quick weeknight meal.


Ingredients

– 4 boneless, skinless chicken breasts

– 8 ounces fresh mozzarella cheese, sliced

– 2 cups cherry tomatoes, halved

– 1/4 cup fresh basil leaves, chopped

– 2 tablespoons olive oil

– 1 teaspoon dried oregano

– 1/2 teaspoon salt

– 1/4 teaspoon black pepper


Instructions

1. Preheat the oven to 400°F.

2. Lay out 4 large sheets of heavy-duty aluminum foil.

3. Place one chicken breast in the center of each foil sheet.

4. Top the chicken with slices of mozzarella cheese, cherry tomatoes, and chopped basil.

5. Drizzle each foil pack with olive oil and sprinkle with oregano, salt, and pepper.

6. Fold the foil over the chicken and crimp the edges to create a sealed packet.

7. Place the foil packs on a baking sheet and bake for 25-30 minutes, or until the chicken is cooked through and the cheese is melted.

8. Carefully open the foil packs and serve the Caprese Chicken immediately.

Notes

– For easier cleanup, line the baking sheet with parchment paper before placing the foil packs on it.

– Customize the recipe by using different types of tomatoes, such as grape or heirloom.

– Garnish with additional fresh basil leaves before serving.
