Description

Tender, shredded pulled pork wrapped in crispy taquitos and smothered in a creamy, spicy chipotle ranch dressing – the ultimate appetizer or party food!


Ingredients

– 2 cups shredded pulled pork

– 1 cup shredded cheddar cheese

– 12 small corn or flour tortillas

– 1 teaspoon chili powder

– 1/2 teaspoon cumin

– 1/4 teaspoon garlic powder

– Salt and pepper to taste

– 1/2 cup sour cream

– 2 tablespoons ranch dressing

– 1-2 teaspoons chipotle pepper in adobo sauce, finely chopped

– Vegetable or canola oil for frying

– Fresh cilantro for garnish


Instructions

1. – In a medium bowl, mix together the pulled pork, 1/2 cup of the shredded cheese, chili powder, cumin, garlic powder, salt, and pepper.

2. – Place a tortilla on a clean surface and spoon 2-3 tablespoons of the pork mixture onto the center. Fold the sides over the filling and then roll up tightly to form a taquito.

3. – Heat 1/2 inch of oil in a large skillet over medium-high heat. Fry the taquitos, seam-side down, for 2-3 minutes per side until golden brown and crispy.

4. – Drain the taquitos on a paper towel-lined plate.

5. – In a small bowl, mix together the sour cream, ranch dressing, and chopped chipotle pepper. Season with salt and pepper to taste.

6. – Arrange the taquitos on a serving platter and drizzle with the chipotle ranch dressing. Sprinkle the remaining 1/2 cup of shredded cheese over the top and garnish with fresh cilantro.

7. – Serve immediately, while hot and crispy!

Notes

– For baked taquitos, preheat oven to 400°F. Place filled taquitos seam-side down on a baking sheet and bake for 12-15 minutes, flipping halfway, until golden brown.

– The chipotle ranch dressing can be made ahead of time and refrigerated until ready to serve.

– Customize the heat level by adjusting the amount of chipotle pepper in the dressing.
