Ingredients
– 6 medium russet potatoes, baked and cooled
– 1 cup sour cream
– 1/2 cup milk
– 2 cups shredded cheddar cheese, divided
– 1/2 cup crumbled bacon
– 2 tablespoons chopped chives, plus more for garnish
– 1 teaspoon garlic powder
– 1/2 teaspoon salt
– 1/4 teaspoon black pepper
Instructions
1. Preheat the oven to 375°F (190°C).
2. Slice the baked potatoes in half lengthwise and scoop the flesh into a large bowl, leaving a thin layer of potato in the skins.
3. Add the sour cream, milk, 1 1/2 cups of the cheddar cheese, bacon, 2 tablespoons of chives, garlic powder, salt, and pepper to the bowl with the potato flesh. Mash and stir until well combined.
4. Spoon the potato mixture back into the potato skins, then top with the remaining 1/2 cup of cheddar cheese.
5. Bake for 20-25 minutes, or until the cheese is melted and bubbly.
6. Garnish with additional chopped chives before serving.
Notes
This dish can be prepared in advance and baked just before serving. It also makes a great side dish for grilled meats or as a main course with a simple salad.
