Ingredients
– 1 cup uncooked couscous
– 1 1/2 cups vegetable broth
– 1 pint cherry tomatoes, halved
– 2 cloves garlic, minced
– 2 tablespoons olive oil
– 1/4 cup fresh basil, chopped
– 1 tablespoon fresh parsley, chopped
– 1/2 teaspoon salt
– 1/4 teaspoon black pepper
Instructions
1. In a medium saucepan, bring the vegetable broth to a boil. Stir in the couscous, cover, and remove from heat. Let stand for 5-7 minutes, until the couscous is fluffy.
2. In a large skillet, heat the olive oil over medium heat. Add the halved cherry tomatoes and minced garlic. Cook for 3-4 minutes, until the tomatoes are slightly softened and the garlic is fragrant.
3. Fluff the cooked couscous with a fork and add it to the skillet with the tomatoes and garlic. Stir to combine.
4. Remove from heat and stir in the chopped basil and parsley. Season with salt and pepper.
