Ingredients
– 4 bone-in, skin-on chicken thighs
– 2 tablespoons olive oil
– 1 teaspoon garlic powder
– 1 teaspoon onion powder
– 1 teaspoon salt
– 1/2 teaspoon black pepper
– 6 cups romaine lettuce, chopped
– 1/2 cup Caesar dressing
– 1/4 cup grated Parmesan cheese
– Croutons for topping (optional)
Instructions
1. Preheat your oven to 425°F (220°C).
2. In a bowl, mix olive oil, garlic powder, onion powder, salt, and pepper.
3. Rub the mixture over the chicken thighs, ensuring they are evenly coated.
4. Place the chicken in a baking dish and roast for 30-35 minutes or until the internal temperature reaches 165°F (75°C).
5. While the chicken is roasting, prepare the salad by tossing chopped romaine with Caesar dressing in a large bowl.
6. Once the chicken is done, let it rest for 5 minutes before serving.
7. Serve the roasted thighs over the dressed romaine, topped with grated Parmesan and croutons if desired.
