Ingredients
– 1 pound boneless, skinless chicken thighs, cut into 1-inch pieces
– 2 tablespoons olive oil
– 1 large onion, diced
– 2 bell peppers, diced
– 3 cloves garlic, minced
– 2 tablespoons sweet Hungarian paprika
– 1 teaspoon smoked paprika
– 1 cup chicken broth
– 1 cup sour cream
– 1 tablespoon all-purpose flour
– 1 teaspoon salt
– 1/2 teaspoon black pepper
– 2 tablespoons fresh parsley, chopped
Instructions
1. In a large skillet, heat the olive oil over medium-high heat. Add the chicken and cook until browned on all sides, about 5-7 minutes. Transfer the chicken to a plate.
2. In the same skillet, sauté the onions and bell peppers until softened, about 5 minutes. Add the garlic and cook for an additional minute, until fragrant.
3. Stir in the sweet and smoked paprika and cook for 1 minute to toast the spices.
4. Whisk in the chicken broth, sour cream, and flour. Bring the mixture to a simmer and let it thicken slightly, about 2-3 minutes.
5. Return the seared chicken and any accumulated juices to the skillet. Reduce the heat to low and let the chicken simmer in the sauce for 10-15 minutes, until the chicken is cooked through and the sauce has thickened.
6. Season with salt and pepper to taste. Garnish with fresh parsley before serving.
7. Serve the Chicken Paprikash over egg noodles, mashed potatoes, or with a side of crusty bread.
