Description
This Chicken Satay Salad is a vibrant and healthy dish featuring tender grilled chicken skewers, fresh vegetables, and a delicious peanut dressing. It’s perfect for a quick lunch or a light dinner.
Ingredients
– 1 pound chicken breast, cut into strips
– 2 tablespoons soy sauce
– 1 tablespoon brown sugar
– 1 tablespoon peanut butter
– 1 tablespoon lime juice
– 4 cups mixed salad greens
– 1 cup cucumbers, sliced
– 1 cup bell peppers, sliced
– 1/4 cup chopped cilantro
– 1/4 cup roasted peanuts, chopped
– Optional: extra lime wedges for serving
Instructions
1. In a bowl, mix soy sauce, brown sugar, peanut butter, and lime juice to create the marinade.
2. Marinate the chicken strips in the mixture for at least 15 minutes.
3. Preheat a grill or grill pan over medium-high heat.
4. Grill the marinated chicken for about 5-7 minutes on each side or until cooked through.
5. In a large bowl, combine the mixed greens, cucumbers, bell peppers, and cilantro.
6. Slice the grilled chicken and place it on top of the salad.
7. Drizzle with additional peanut dressing if desired and sprinkle with chopped peanuts.
8. Serve immediately with lime wedges on the side.
Notes
For a vegetarian version, substitute chicken with tofu. Store leftovers in an airtight container in the refrigerator for up to 2 days.
