Ingredients

– 1 pound boneless, skinless chicken breast

– 2 tablespoons olive oil

– 2 teaspoons ground cumin

– 2 teaspoons paprika

– 1 teaspoon garlic powder

– 1 teaspoon ground coriander

– 1 teaspoon salt

– 1/2 teaspoon black pepper

– 4 cups mixed greens (spinach, arugula, etc.)

– 1 cup cherry tomatoes, halved

– 1 cucumber, diced

– 1/2 red onion, thinly sliced

– 1/4 cup tahini dressing (or yogurt dressing)


Instructions

1. In a bowl, combine olive oil, cumin, paprika, garlic powder, coriander, salt, and black pepper.

2. Add chicken breast to the marinade and let it sit for at least 15 minutes.

3. Preheat a grill or skillet over medium-high heat. Cook marinated chicken for 6-7 minutes on each side, or until fully cooked.

4. Remove chicken from heat and let it rest for a few minutes before slicing.

5. In a large bowl, combine mixed greens, cherry tomatoes, cucumber, and red onion.

6. Top the salad with sliced chicken and drizzle with tahini dressing. Toss gently to combine and serve immediately.
