Ingredients

– 1 lb boneless, skinless chicken breasts, cubed

– 2 tablespoons olive oil

– 1 onion, diced

– 3 carrots, peeled and sliced

– 3 celery stalks, sliced

– 4 cloves garlic, minced

– 6 cups chicken broth

– 2 bay leaves

– 1 teaspoon dried thyme

– 1/2 teaspoon dried rosemary

– Salt and pepper to taste

– Chopped fresh parsley for garnish


Instructions

1. 1. In a large pot or Dutch oven, heat the olive oil over medium heat.

2. 2. Add the onion, carrots, and celery, and sauté for 5-7 minutes, until softened.

3. 3. Stir in the garlic and cook for 1 minute, until fragrant.

4. 4. Add the cubed chicken, chicken broth, bay leaves, thyme, and rosemary. Season with salt and pepper.
