Tender chicken, fresh spinach, and tangy artichoke hearts are layered between lasagna noodles and a rich, creamy sauce for a comforting and delicious family meal.


Ingredients

– 9 lasagna noodles

– 2 cups shredded cooked chicken

– 2 cups fresh spinach, chopped

– 1 (14 oz) can artichoke hearts, drained and chopped

– 1 (15 oz) container ricotta cheese

– 2 cups shredded mozzarella cheese

– 1/2 cup grated Parmesan cheese

– 2 eggs

– 1 teaspoon dried basil

– 1/2 teaspoon garlic powder

– 1/4 teaspoon salt

– 1/4 teaspoon black pepper

– 1 (24 oz) jar marinara sauce


Instructions

1. Preheat oven to 375°F.

2. Cook the lasagna noodles according to package instructions. Drain and set aside.

3. In a medium bowl, mix together the ricotta cheese, 1 cup of the mozzarella, Parmesan, eggs, basil, garlic powder, salt, and pepper.

4. Spread 1/2 cup of the marinara sauce in the bottom of a 9×13-inch baking dish.

5. Layer 3 lasagna noodles in the dish. Spread half of the ricotta cheese mixture over the noodles, then top with half of the chicken, spinach, and artichoke hearts.

6. Repeat the layers of noodles, ricotta, chicken, spinach, and artichokes.

7. Top with the remaining 3 lasagna noodles and the remaining marinara sauce.

8. Sprinkle the remaining 1 cup of mozzarella cheese over the top.

9. Cover with foil and bake for 30 minutes.

10. Remove the foil and bake for an additional 15 minutes, or until the cheese is melted and bubbly.

11. Let the lasagna sit for 5-10 minutes before serving.

Notes

For a creamier texture, you can add a layer of bechamel sauce between the noodles and the ricotta cheese mixture. You can also substitute spinach for kale or other greens. To make this dish gluten-free, use gluten-free lasagna noodles.
