Description
This Chimichurri Chicken Salad combines tender grilled chicken with fresh vegetables, all tossed in a zesty chimichurri dressing. It’s perfect for a quick lunch or a light dinner!
Ingredients
– 1 pound chicken breast, grilled and sliced
– 4 cups mixed greens (arugula, spinach, romaine)
– 1 cup cherry tomatoes, halved
– 1 cup cucumber, diced
– 1/2 cup red onion, thinly sliced
– 1/4 cup fresh parsley, chopped
– 1/4 cup fresh cilantro, chopped
– 1/2 cup chimichurri sauce (store-bought or homemade)
– Salt and pepper to taste
Instructions
1. Preheat the grill and cook the chicken breast until fully cooked and slightly charred. Allow it to rest and then slice.
2. In a large bowl, combine mixed greens, cherry tomatoes, cucumber, red onion, parsley, and cilantro.
3. Add the sliced chicken on top of the salad mix.
4. Drizzle chimichurri sauce over the salad and toss gently to combine.
5. Season with salt and pepper to taste before serving.
Notes
This salad can be made ahead of time; just keep the chimichurri sauce separate until ready to serve. For added flavor, marinate the chicken in chimichurri sauce before grilling.
