Description

This Chinese Chicken Salad is a perfect blend of fresh vegetables and tender chicken, all tossed in a zesty dressing. It’s light, refreshing, and ideal for lunch or dinner.


Ingredients

– 2 cups cooked chicken breast, shredded

– 4 cups romaine lettuce, chopped

– 1 cup red cabbage, shredded

– 1 cup carrots, grated

– 1/2 cup green onions, sliced

– 1/2 cup slivered almonds

– 1/4 cup sesame seeds

– 1/2 cup cilantro, chopped

– 1/2 cup soy sauce

– 1/4 cup rice vinegar

– 2 tablespoons honey

– 1 tablespoon sesame oil

– Salt and pepper to taste


Instructions

1. In a large bowl, combine the shredded chicken, romaine lettuce, red cabbage, carrots, and green onions.

2. In a separate bowl, whisk together soy sauce, rice vinegar, honey, sesame oil, salt, and pepper to create the dressing.

3. Pour the dressing over the salad mixture and toss gently to combine.

4. Add the slivered almonds, sesame seeds, and cilantro, and toss again.

5. Serve immediately or refrigerate until ready to serve.

Notes

For added crunch, consider including crispy wonton strips. This salad can be stored in the fridge for up to two days; however, add the dressing just before serving to keep it fresh.
