Description
Churu Chicken Amarillo is a comforting and flavorful dish that can be prepared in just 20 minutes. Tender chicken pieces are simmered in a vibrant, golden-colored sauce, creating a dish that’s perfect for busy weeknights.
Ingredients
– 1 pound boneless, skinless chicken breasts, cut into bite-sized pieces
– 1 tablespoon olive oil
– 1 onion, diced
– 3 cloves garlic, minced
– 1 tablespoon ground cumin
– 1 teaspoon smoked paprika
– 1 teaspoon dried oregano
– 1 cup chicken broth
– 1 cup diced tomatoes
– 1/4 cup freshly chopped cilantro, plus more for garnish
– Salt and pepper to taste
– Cooked white rice, for serving
Instructions
1. Heat the olive oil in a large skillet over medium-high heat.
2. Add the chicken and cook, stirring occasionally, until browned on all sides, about 5 minutes.
3. Add the onion and garlic to the skillet and cook for 2-3 minutes, until fragrant.
4. Stir in the cumin, smoked paprika, and oregano, and cook for 1 minute.
5. Pour in the chicken broth and diced tomatoes, and bring the mixture to a simmer.
6. Reduce the heat to low and let the sauce simmer for 10-12 minutes, or until the chicken is cooked through and the sauce has thickened.
7. Stir in the chopped cilantro and season with salt and pepper to taste.
8. Serve the Churu Chicken Amarillo over cooked white rice, garnished with additional cilantro.
Notes
– For extra flavor, you can add a squeeze of fresh lime juice just before serving.
