Description

This Classic Southern Potato Salad is a creamy, tangy dish that’s perfect for any gathering. With tender potatoes and a delicious dressing, it’s sure to be a hit!


Ingredients

– 2 pounds red potatoes

– 1 cup mayonnaise

– 2 tablespoons Dijon mustard

– 1 tablespoon apple cider vinegar

– 1/2 teaspoon salt

– 1/4 teaspoon black pepper

– 1/2 cup diced celery

– 1/2 cup chopped green onions

– 3 hard-boiled eggs, chopped

– Paprika for garnish


Instructions

1. Start by washing the red potatoes and cutting them into even chunks.

2. Boil the potatoes in salted water for about 15-20 minutes or until tender.

3. Drain the potatoes and let them cool to room temperature.

4. In a large bowl, combine mayonnaise, Dijon mustard, apple cider vinegar, salt, and pepper.

5. Once the potatoes are cool, add them to the bowl along with celery, green onions, and chopped eggs.

6. Gently mix until the potatoes are well coated.

7. Chill in the refrigerator for at least 1 hour before serving.

8. Garnish with paprika and serve cold.
